Hey, friends!
First off, thank you so much for all the sweet encouragement and comments on my Mini Home Tour and Pregnancy Diary postsā I didnāt necessarily expect for those to be as popular as they were, but Iām feeling the love, and it means the world. š
I wonāt lieā this week was stressful. We had a preterm labor scare with the twins earlier in the week where we were admitted to the hospital. Thankfully, everything calmed down and it didnāt progress to full-blown labor.
While it all worked out, Iām still quite on edge from the whole experience...
I supposed to have weeks & weeks & weeks to go in my pregnancy so I am taking it VERY easy, resting as much as I can, and just hoping that my body is able to hold onto these twins a while longer. But Iāll be honestāitās been a real mind game. Every little twinge or cramp sends me spiraling if early signs of labor are starting all over againā¦
So here I amā a chronic overthinkerā trying to embrace the mindset of ācontrolling the controllablesā while surrendering the rest.
But itās tough, isnāt it?
When I get stressed, the urge to grasp for some artificial sense of security sneaks in, and I catch myself researching, fixating, spiraling, overthinking, planningā doing anything that makes me feel like I have a āsolutionā and some semblance of control over a situation.
And itās funnyā because I logically KNOW that their arrival is mostly out of my hands, yet I feel the incessant need to gather more information, fixate, and try to do everything ārightā in order to reach my desired outcome of keeping them safe & sound for a while longer.
And maybe you can relate? Whether itās related to a pregnancy, your career, navigating a relationship, embarking on a big vacation, looking at your finances, planning a wedding, buying a house, contemplating a life change, etc., itās so easy to get lost in endless loops of researching, āplanningā, and trying to predict outcomes in hopes of steering life exactly where we want it to go.
But, deep down, we understand that many things are NOT in our control.
We know thisā but it can be hard to accept this.
Itās a practiceā a lesson Iāve been handed more times than I can countā reminding myself to breathe, to let go of whatās beyond me, and to find peace in doing the things that are in my control while surrendering. the. outcome.
Because, try as I might, I will never be able to fully research, fixate, or plan my way to a guaranteed ~perfect~ result. Instead, Iām learning to find quiet peace of releasing expectations, trusting MY unique path, and simply hoping for the best. One day at a time.

Last week, my husband and I whipped up 20+ crockpot meals to have on hand for when the babies arrive. (Is there anything better than having a well-stocked, organized, and prepped freezer? I think not.)
And let me tell you, I was reminded yet again of how much I love these RANDOM little freezer bag holder thingysā they are the simplest gadget, but make such a difference.
It simply holds your baggie upright so you can pour and mix and add to your each bag without making a huge mess, making unnecessary spills, or having confusion about which bag youāve already added an ingredient to.
Iām not one to fill my kitchen with unnecessary gadgets, but if you make freezer meals even somewhat regularly, this one is a must. For real. Itās one of those small things that genuinely makes a big differenceā highly recommend!
Thee healthy freezer fudge recipe. š If youāve been following along since the good olā days of my blog you might recognize this, but I just had to remind you because this recipe is elite (if I do say so myselfšš»āāļø).
Not only is it delicious, but it's also more blood sugar-friendly than your usual chocolate (thanks to those healthy fats!), lower in carbs, AND ready in under 30 minutes. Need I say more? Enjoy that fudgy goodness, my friend!
š« INGREDIENTS:
1 cup coconut oil, melted
Ā¼ cup cocoa or cacao powder
2 tablespoons pure maple syrup OR 8ā10 drops liquid stevia OR 8-10 drops organic monk fruit to sweeten
1/3 cup almond butter or another nut butter of your choosing
A pinch of sea salt (optionalābut highly recommended. it adds such a delicious depth of flavor.)
You could also get CrAzYyYY, and sprinkle with coconut flakes, almond slices, walnuts, or any other fun topping youād like! (optional)
š« INSTRUCTIONS:
Melt the coconut oil and add to a mixing bowl.
Add cocoa/cacao powder, sweetener of choice, and the nut butter. Whisk aggressively and mix very thoroughly.
Pour the mixture into a small pan that will allow you for about 3/4th-1 inch thickness of the mixture or use a silicone ice cube tray (like this!) for bite-size squares effortlessly.
Sprinkle with a pinch of course, flaky sea salt (or other optional toppings of your choosing)
Toss that bad boy into your freezer and wait only 15ā20 minutes for it all to firm up. You donāt have to wait long!
Enjoy! Continue to store in the freezer & simply reach for one of these whenever youāre looking for a sweet treat that wonāt have you doing the blood sugar roller coaster 20 minutes later. :)
