While most people are droolin’ over pumpkin spiced lattes, I’m just the weirdo overly excited for the seasonal produce. This is my vegetable Super Bowl, you guys.
From squash to beets to brussels to carrots, these hearty (yet bright!) veggies are some of my very favorites of the whole year.
So, for October’s recipe of the month, I’m coming at you with one of my FAVORITE dishes that you can make again and again based on whatever fallish veggies you have on hand (AKA this recipe is great for a fridge cleanout!)
It’s a quick + easy recipe for maple-balsamic sheet-pan roasted veggies. And I may or may not have made it 3x within the last week.
It’s cozy, it’s hearty, it’s flavorful, and most of all, it’s healthy.
