the origin story—
I recently free-styled this recipe when we were in Denmark. We had some plans with friends, and I didn’t want to show up empty-handed so off to the supermarket I ran!
I wanted something light. fresh. summery.
Because, our “plans” were actually to have an afternoon picnic with our friends in a little dreamy Danish greenhouse nestled on a homestead— like, what?!

(Trust me when I say that’s not what a ~normal~ day looks like for me, but it really is true that for that one sunny Saturday April afternoon I was indeed sitting in the Danish countryside, snackin’ on salmon, and playing cards with friends in the fresh air, and THAT’S how this recipe came to be. Ahhhhhh.)
Alright, let’s dig into the recipe before I get swept up in that daydream (again).
The TL;DR? You don’t need to be sitting in an idyllic patio hour in order to enjoy these creamy, delicious salmon bites (although, I am sayin’ they would be a HIT at your next ladies wine night).
I actually just made these yesterday— on an ordinary weekday at home for a healthy, filling snack. On top of being easy & delish— they are also easy, low carb, filling, and protein rich.
AKA— easy, fun, *and* healthy. My personal trifecta.
