A Delicious (And Unique!) Thanksgiving-Style Salad

Here’s the thing— we all know (and love) the classic Thanksgiving foods: potatoes, stuffing, and all that gravy goodness.
And for good reason!
These dishes *are* delicious.
But, today, we are covering a different kind of Thanksgiving side…
a… SALAD?!
And, before you roll your eyes… I know what you’re thinking.
Kate, a bowl of healthy veggies? On Thanksgiving?? REALLY?!
But hear me out—
In the midst of all of the rich, hearty dishes of Thanksgiving, many of us actually kind of want a healthy option with a pop of freshness, a burst of color, and some fresh produce to to shake things up!
So, this past weekend, I put it to the test—
I whipped up a Thanksgiving-style salad for a Friendsgiving, and let me tell you, I was genuinely kind of nervous to contribute a bowl of VEGETABLES to a feast. (Like, I”m fun and normal, I promise!!!)
But it’s easy to assume that a healthy, veggie-filled holiday dish could result in your loved reacting like this:
And I get it— when we typically think of Thanksgiving, we're more likely to envision an epic mashed potato & gravy “volcano” than a pile of kale, right?
But, I went for it.
And guess what?
Every. Last. Bite. Was Gone. 💁🏻♀️
So, it turns out that while you may picture an eye-roll for a healthy holiday salad, you may actually get a reaction like this—
And the major pro of this *specific* salad recipe is that it fits the Thanksgiving vibes.
The salad feels distinctly “fall”, but still has some bright, fresh, & unexpected elements to break up all the rich gravy & root veggies & decadent sides of the holidays.
There’s hearty, earthy flavors (sweet potatoes & greens), rich flavors & healthy fat (delicious cheese, nuts, & olive oil), and some bright, uplifting flavors (apples & pomegranate & vinegar, oh my!).
Because as much as I love the classics, there's just something about breaking the mold a bit.
