Well, it's time to [quite literally] spice things up with this Korean-style ground beef and rice recipe that will have ya drooooolin’.
Not only is this recipe SUPER easy to make (like, actually), but it's *also* a great way to use up that ground beef that's been sitting in your freezer for ages.

This dish is SO simple, packed with flavor, and well-balanced with protein and carb (AKA, she be hearty!). .

In fact, the first night I made this was after a lonnnng day. My husband was working his 3rd consecutive 12-hour shift at the hospital— resulting in another solo parenting day of me trying to find the elusive ~balance~ of running my own business at home annnnnd taking care of our 9-month-old baby. [insert nervous laugh here]
On this particular evening, I found myself quite low on energy after a long day and lacking motivation to cook dinner (AKA…. just like every other weekday, lolz).
However, I didn't want to resort to ordering takeout or just snacking mindlessly eating a whole bag of chips for “dinner”
(we’ve all been there, right?)
…………..RIGHT?!
But in a moment of sheer #discipline, I instead decided to just make A TRUE ADULT MEAL. Huzzah!
But something easy, of course—
Upon rummaging around the kitchen, I found frozen ground beef in the freezer, some sesame oil in the pantry, some garlic, some coconut aminos… and suddenly the idea of a beef rice dish popped into my head.
Annnnnd… before I knew it, I was eating a delicious and comforting bibimbap-inspired style meal that satisfied *everyone* in the family.
(like, seriously. my 9-month-old genuinely ate it & loved it, hahah).
Not to mention, it made LEFTOVERS.
Aka, it’s perfect.
